Memories—like sweet dreams—are made of this; a good cocktail. And that my friends, is where we’re at. The official drink for Summer 2021 is Whipped Frozen Lemonade. That’s right. Lemonade has been revamped and you just have to get your hands on this.
A refreshing treat that is easy to make and one you’ll love for days. It combines the tang of freshly squeezed lemon juice with the creaminess of a milkshake. Thirst-quenching and perfect for the heat, it’s made with simple ingredients. Here how to whip it up:
125ml Freshly squeezed lemon juice
250ml Full fat Coconut Milk
64g granulated sugar
2 ½ cups of ice
Lemon zest (1 lemon)
Put the sugar and water in a saucepan with the burner on medium heat. Let it simmer and stir occasionally until the sugar is completely dissolved. Stir in the lemon zest for two minutes and remove from heat. Cover the pan and let it steep for 1 hour. Strain the syrup through a fine-mesh sieve discarding the zest. You’ve made simple syrup.
In a blender, pour 125ml of Simple syrup, lemon juice, coconut milk, and ice. Blend until smooth; ice is crushed and mixture is slushy.
You can store the extra Simple syrup for one week in the fridge which is good news for making the next batch. Cuts the time in half.
